Paleo Asian Stirfry

The thing about eating “healthy,” is that you can make anything, and I mean ANYTHING that resembles what you are craving.

Usually, Asian stir-fries are filled with LOTS of oil, LOTS of soy, and LOTS of greases. Soooooo I have created this bomb replacement!

Ingredients for chicken:
Chicken
Coconut aminos
Ginger
*optional: Cassava flour & Sesame seeds

Ingredients for salsa:
Papaya
Tomatoes
White onion

Ingredients for veggies:
Zucchini
Cucumbers
Onions
Mushrooms

Directions:
Pan fry the chicken in coconut aminos and minced ginger. 
Once chicken is cooked, take out chicken (leaving sauce in pan).
Thicken sauce with a little cassava flour.
Pour sauce over chicken and add sesame seeds.

Add chopped vegetables to pan that cooked chicken in & sautte.
(I used zucchini, cucumbers, onions, and mushrooms).
To make salsa: Mix papaya, tomatoes, and white oninos.

End result: Mix quinoa or brown rice with chicken, veggies, and salsa for an amazing meal! Another option is to put this in lettuce cups.
