Almond Butter Berry Bars (with a tad of chocolate)

I’m at home for Thanksgiving so of course, the first morning I wake up, I bake something paleo and delicious for my family! Today was these decadent Almond Butter Berry Bars!


Recipe & Directions for Berry Mixture:
1.5 cups berries or fruit of choice 
(I used acaí, blueberries, bananas, and persimmons) 
.25 cups of chocolate chips (I used Lily's Sweets) 
==> Cook over medium heat in a saucepan for 15 minutes 
or until begins to thicken


Recipe & Directions for base layer:
1/2 cup coconut milk mixed with 1 tbsp lemon 
(mix separately, set aside for 10 minutes, and add last)
2 eggs (or flax eggs if vegan)
1 cup almond flour
1/4 cup coconut flour
1/2 cup almond butter (or any nut butter)
1/2 cup maple syrup (can lessen to 1/4 cup if don't like very sweet)
1/4 cup coconut oil
2 tsp vanilla
2 tsp baking powder
1/2 tsp salt

With 1/4 of base mixture: 
- add 1/4-1/2 cup coconut sugar
- 1 tbsp maple syrup
- coconut milk until mixture is slightly runny


To combine all: 
Mix all ingredients & put 3/4 of base mixture into baking pan.
Add berry mixture on top.
Add 1/4 of new base mixture on top of berry mixture. 
Optional to add chocolate chips.

To bake:
350 degrees Fahrenheit for 35 minutes. 
Let cool 15 minutes before cutting.
Optional to serve with vanilla ice cream on top!
