Blue and Purple waffles that are actually healthy? These easy, delicious waffles are fun for everyone and will be gobbled up in seconds!
- 1/2 cup mashed and cooled sweet potato
*tip: (use purple sweet potato for color)
- 2 eggs
- 1 pinch of baking soda, baking powder, and sea salt.
- Optional: 1 tsp coconut sugar, 1 tsp vanilla,
& 1/2 tsp cinnamon
Pour batter in waffle maker (or pan if making pancakes).
Top with coconut sugar, berries,
yogurt, syrup, chocolate chips,
nutbutter... the possibilities are endless!
