Healthy Twix Bars

HEALTHY TWIX? These were devoured by my junk-food loving friends… so you have proof they are amazing!

Recipe:
Layer 1:
1 cup cassava flour
1/3 cup vegan butter or coconut oil
1/4 cup honey
1 teaspoon vanilla and baking powder
Pinch of salt
Layer 2:
1/2 cup peanut butter (or any nut butter!)
12 pitted and soaked dates
1 teaspoon vanilla & cinnamon
Pinch of salt
Layer 3:
1.5 cups chocolate chips
2 tablespoons vegan butter or coconut oil

Directions:
Mix layer 1 ingredients together.
Pat down into a brownie pan.
Bake at 350 F for 12 minutes.

Blend layer 2 ingredients together.
Spread on top of layer 1 once layer 1 is out of oven.
Put in freezer while melting chocolate in microwave.

Spread chocolate on top of layer 1 and 2 concoction.
Let entire Twix mix sit in freezer for at least 1 hour.
Take out and cut into bars.
Store and freezer and enjoy!
